European settlers arriving in the northeast during the fur trading boom observed Indigenous peoples making high-calorie maple sugar every spring, which was used to sustain them through the tough winter months. The settlers used their technology to improve on the process of tapping maple trees and making crystallized maple sugar, which was then broken down into slices and melted or shaved directly over dishes.
